Who doesn’t love an ooey, gooey, melty grilled cheese sandwich?! I am absolutely obsessed with this Brie and Pear Grilled Cheese for a couple of reasons. I love the elevated brie and gruyere cheeses that take this sandwich to next level amazingness. But even more, I am all about the sweet pear an herbaceous fresh thyme that accompany this sandwich and offer a nice balance to the rich cheese. Lastly, this brie and pear grilled cheese sandwich is drizzled with a good amount of honey for an extra pop of flavor.
How to make a Brie & Pear Grilled Cheese Sandwich
Here’s what you’ll need:
- good sliced bread, preferably from a bakery quality loaf
- brie & gruyere cheeses
- a firm but ripe pear
- fresh thyme
- room temperature butter
- honey, for drizzling
To make this delectable brie and pear grilled cheese sandwich, simply layer the cheeses, sliced pear and thyme over a couple of slices of good quality bread, butter the outsides and cook in a buttered skillet over medium heat, flipping once, until the cheese is nice and gooey and the bread is golden and toasty. Then drizzle the top of the sandwich with honey just before serving.
Tips & tricks for the perfect grilled cheese sandwich every time
I don’t recommend sliced sandwich bread for this sandwich. You’ll want a nice hearty loaf to hold up it’s end of the bargain. I used a seeded wheat loaf, but sourdough would also be lovely.
It helps to butter the outside of each side of the bread as well as melting butter directly into the skillet. this will help the entire slices of bread brown.
Keep an eye on your sandwich to make sure the bread doesn’t burn! A little char is okay, but too much is never a good thing. The butter can burn easily too, so make sure to keep the heat steady around medium as the sandwich is cooking.
My favorite way to make grilled cheese sandwiches is in a cast iron skillet. I find that it helps the bread toast evenly.

Brie & Pear Grilled Cheese Sandwich
Elevate your grilled cheese game with this ooey, gooey Brie & Pear Grilled Cheese Sandwich with honey and fresh thyme.
Ingredients
- 2-3 tablespoons unsalted butter room temperature
- 2 slices bread preferably from a bakery quality loaf
- 3-4 slices Brie cheese
- 2-3 slices firm but ripe pear
- Pinch of fresh thyme leaves
- 2 slices Gruyere cheese
- Honey for drizzling
Instructions
- Lightly butter one side of each piece of bread with a tablespoon of butter. The buttered sides will be the outside of the sandwich.
- Layer the Brie, sliced pear and thyme on the unbuttered side of one piece of bread. Top with Gruyere cheese and the second slice of bread, making sure that the buttered side is facing out.
- Heat a small skillet over medium-low heat. Melt one tablespoon of butter and add the sandwich to the skillet. Cook for 2-3 minutes on one side, then flip. Cook for another 2-3 minutes or until the cheese is melted and the bread is golden and toasty. If the skillet appears dry when it’s time to flip the sandwich flipping, add the last tablespoon of butter.
- Remove sandwich from heat and drizzle the top of the sandwich with honey just before serving.
