I hardly buy coffee at coffee shops any more. It saves me money and reduces waste, so it’s a no brainer for me. These days when I want a cup of coffee I’ll simply make it at home in my favorite French press. Some mornings though I do crave a fancy flavored latte that you would find at a coffee shop.
Now that spring has arrived I was inspired to make this Lavender Latte to satisfy that bougie coffee drink craving. Lavender is one of my favorite flavors of the season, and I thought it sounded lovely in a coffee drink.

How to make homemade oat milk
Making your own oat milk for this homemade lavender latte is a completely optional step. It only takes a few minutes, but of course you can use any kind of store bought milk or alternative milk that you prefer if you want to skip this step.
To make homemade oat milk, simply add 1 cup old fashioned oats, 4 cups water and a pinch of salt to a blender and blend until smooth. You can also add a tablespoon of maple syrup if you’d like. Then strain it through a cheesecloth or nut milk bag- that’s it!
How to make lavender simple syrup
Making the lavender simple syrup for these lattes is exceptionally easy. Equal parts sugar and water are simmered with dried lavender buds to extract the flavor. Just make sure to use culinary lavender as not all types of lavender are meant for cooking. You can typically find dried culinary lavender buds in the spice section of your grocery store or at your local farmers market.
You’ll want to strain the lavender buds from the syrup after the syrup has cooled and had a chance to steep in the liquid.
This recipe makes about 1/4 cup of syrup, enough for you to enjoy a lavender latte all week long! You can easily double or triple the recipe if you’d like to make a bigger batch.
How to make a lavender latte at home
Once your lavender simple syrup is done you’ll be on your way to sipping on a lavender latte in no time at all. The first thing you’ll want to do is brew a fresh cup or pot of coffee. My preference is in a French press, but make it however you like! Then add 1 tablespoon of the lavender simple syrup to the cup. You can add more or less depending on the level of sweetness you like in your coffee drinks.
Next, fill the cup with hot coffee.
And lastly top with steamed and frothed oat milk (or whatever kind of milk you prefer). I like to warm the oat milk gently in a saucepan (you could also stick it in the microwave for about 30 seconds) and I swear by this milk frother from Bodum- it makes the best froth!!
Lavender Latte

Ingredients
For the lavender simple syrup:
- 1/4 cup sugar
- 1/4 cup water
- 1 tablespoon dried lavender buds
For the latte:
- 1 tablespoon lavender simple syrup
- Freshly brewed hot coffee
- Steamed and frothed oat milk or whatever kind of milk you prefer
Instructions
- In a small saucepan, combine sugar, water and lavender. Bring to a simmer over medium heat and cook for about 5 minutes or until sugar has dissolved. Remove from heat and allow to cool. Strain syrup through a fine mesh strainer into a jar to remove lavender buds and set aside.
- To make the latte, add 1 tablespoon simple syrup to a coffee cup. Fill with coffee to desired level and stir. Top with frothy oat milk.

Great recipe! When making a latte, I reduced the amount of syrup to 1 -1.5 teaspoon. Gives it subtle aroma and taste of lavender. Great way to start the morning
How long will the syrup last for on the shelf?
This syurp is amazing. How long is the shelf life? I also made a rose cardamom syrup at the same time and it molded. So far the lavender one looks fine. I made it about 2 weeks ago maybe 3.
This was very good! I used regular cow’s milk, but the syrup turned out much better than expected. I didn’t have a chance to grab any food-grade lavender, but I remembered I had some organic lavender in a sachet, & it worked great. Even my husband thought it was good, & he’s not a floral-taste person. I did leave a few buds in the latte for extra aroma.
