What makes this Winter Citrus Salad so delicious

This Winter Citrus Salad features some of the best and brightest produce of the season: grapefruit and mandarins, shaved fennel, pomegranate, mint and the most adorable Pure Flavor® Uno Bites™ Nano Cucumbers. Their miniature size makes them perfect for snacking, but they also make a truly memorable addition to this salad.

I sliced the Pure Flavor® Uno Bites™ Nano Cucumbers lengthwise into paper thin ribbons using a mandolin to elevate this salad. Together with the other ingredients, the combination of vibrant colors and different textures are a big winner for the winter season.

A citrus vinaigrette that couldn’t be simpler

I made the easiest vinaigrette ever for this Winter Citrus Salad! Reserve a bit of the grapefruit and squeeze the juice into a small bowl. Then whisk in some olive oil and a pinch of salt- that’s it! Because the other ingredients have so much natural flavor of their own, a complicated dressing isn’t necessary, simply a bit of seasoning.

And don’t skip the flaky sea salt on top- it really accentuates all of the flavors going on in this salad!

How far in advance can I make this citrus salad?

You can prep the ingredients for this salad 1-2 days in advance. I recommend keeping the dressing separate and tossing it in just before serving.

Ingredients

  • 2 tablespoons freshly squeezed grapefruit juice
  • 1 tablespoon olive oil
  • Pinch of salt
  • 1 Grapefruit peeled and sliced into rounds
  • 1-2 Satsuma Mandarins or oranges peeled and sliced into rounds
  • 6 Pure Flavor Uno Bites Nano Cucumbers or 1 medium seedless cucumber, thinly sliced
  • 1 medium fennel bulb thinly sliced
  • 1 small handful pomegranate arils
  • Fresh Mint leaves
  • 2 tablespoons freshly squeezed grapefruit juice
  • 1 tablespoon olive oil
  • Flaky sea salt

Instructions

  1. Whisk together grapefruit juice, olive oil and salt in a small bow. Set aside.
  2. Arrange grapefruit slices, mandarin slices, cucumber and fennel on a plate. Drizzle with vinaigrette.
  3. Top with pomegranate and mint.
  4. Sprinkle generously with flaky sea salt.
