This Lemon Cream Pie Protein Shake tastes superbly decadent, but it’s gluten free, dairy free, vegan and packed with protein and fiber!

Ingredients

  • 1 cup cashew or almond milk
  • 1 cup frozen banana slices
  • 2 tablespoons plant based vanilla protein powder
  • 1 teaspoon lemon zest
  • 2 teaspoons lemon juice
  • 1/4 teaspoon vanilla extract
  • 1/8 teaspoon lemon extract
  • coconut whipped cream optional
  • cookie or pie crust crumbs optional

Instructions

  1. Add cashew or almond milk, frozen banana, protein powder, lemon zest, lemon juice, vanilla extract and lemon extract to a blender and blend until smooth.
  2. Pour into a glass and top with coconut whipped cream and cookie or pie crust crumbs, if desired.

Recipe Notes

  • Make sure you remove pesticides from your lemons. To do so, fill a large bowl with 4 parts water to 1 part plain white vinegar. Soak the lemons along with other veggies or fruit you'd like to clean in the mixture for 20 minutes. Rinse the fruit or vegetables well with water.
  • For full control of all ingredients, I recommend you make your own coconut whipped cream.  Use this easy recipe to do so. You can use swerve for a sugar-free version! “Native Forest” is a good brand. It is organic and actually labeled as coconut cream.
