Zucchini Fritters with Sweet Pepper Sauce

These tasty zucchini fritters are a great way to get your daily dose of greens. Serve them with an incredible sweet pepper sauce and you won’t be able to get enough of them!

It’s always nice to have something hanging out in the fridge that you prepared at the beginning of the week to be able to reheat easily during busy moments throughout the rest of the week- bonus if it’s packed with vegetables and you can have it for any meal!

Well, that’s exactly what these Zucchini Fritters with Sweet Pepper Sauce bring to the table! In fact, I heated up two of them in a skillet and popped a fried egg on top to have for breakfast as I was writing this post- yum!

I partnered with 4Earth Farms to bring you this vegetable rich dish. The organic zucchini (some of the largest I’ve seen in recent memory) and vibrant sweet peppers they sent me were begging to be made into so many delicious things.

I was inspired to whip up these zucchini fritters paired with a roasted sweet pepper sauce. My busy schedule can always use more meal prep-style dishes that are full of nutrient rich vegetables- I’m sure I can’t be alone on that!

Why these zucchini fritters are so amazing

As I mentioned, these zucchini fritters are incredibly versatile! Make a big batch and have them with eggs in the morning, with a side salad for lunch, or as a side dish with your favorite protein at dinnertime. They make a great snack on their own as well, especially when topped with a dollop of the flavor packed sweet pepper sauce.

How to make the sweet pepper sauce

To make the sauce, first you’ll need to roast the 4 Earth Farms organic sweet peppers, which you can do quickly by broiling them. They are small so it doesn’t take long, about 15 minutes.

Then, after they are cool enough to handle, slip the blistered skins off and remove the seeds, and pop them into a blender or food processor along with almonds, red onion, sherry vinegar, garlic salt and olive oil.

The combination creates a rich, complex tasting sauce that you’ll want to put on everything! In addition to topping these zucchini fritters, try it with fish or chicken, toss it with pasta or dip fresh vegetables into it for a healthy snack!

What you’ll need to make the zucchini fritters

  • 4 cups 4Earth Farms organic zucchini
  • 2/3 cup all-purpose flour (you can use all-purpose gluten free flour too)
  • 2 eggs
  • 1/3 cup sliced scallions (green and white parts)
  • 1 clove minced garlic
  • 1/2 teaspoon salt
  • 2 tablespoons vegetable oil

To make the fritters, make sure to squeeze as much liquid as possible from the shredded zucchini before mixing in the other ingredients. Then simply form them into patties and pan fry them until golden and crispy on both sides.

Can I make this recipe ahead of time?

My favorite part about these zucchini fritters (besides their versatility) is that you can make them in advance. Reheat them in the oven or a lightly oiled skillet to enjoy throughout the week! You can even make a double batch and freeze half.

The sweet pepper sauce can be made in advance as well and will keep for about a week in the refrigerator stored in a covered container.

Zucchini Fritters with Sweet Pepper Sauce

These tasty zucchini fritters, served with an incredible sweet pepper sauce, are a delicious way to get your daily dose of vegetables.

Ingredients

for the sweet pepper sauce:

  • 8 ounces 4Earth Farms organic sweet peppers about 8-10 peppers
  • 2 tablespoons diced red onion
  • 1/4 cup raw almonds
  • 1 pinch red pepper flakes
  • 2 tablespoons sherry vinegar or red wine vinegar
  • 1/2 teaspoon garlic salt
  • 1/4 cup olive oil

for the fritters:

  • 4 cups shredded 4Earth Farms organic zucchini
  • 2/3 cup all-purpose flour
  • 2 large eggs lightly beaten
  • 1-2 cloves garlic minced
  • 1/3 cup sliced scallions
  • 1/2 teaspoon salt
  • 2 tablespoons high heat cooking oil such as avocado or coconut

Instructions

  1. Place the sweet peppers on a foil or parchment lined baking sheet. Place under the broiler and cook for about 10-15 minutes, flipping the peppers once about halfway through so that they blister on both sides.
  2. Let stand until cool enough to hold, then peel off the burned outer skin and remove any seeds.
  3. Put the sweet pepper, onion, almonds, red pepper flakes, vinegar, garlic salt and olive oil in the container of a food processor or blender. Blend until smooth. Set aside.
  4. Place the shredded zucchini in a colander set over a bowl and sprinkle the zucchini lightly with salt. Allow the zucchini to stand for 10 minutes. Using your hands, squeeze out as much liquid from the zucchini as possible. Transfer to a large bowl.
  5. Add the flour, eggs, scallions, garlic and salt to the bowl. Stir to combine.
  6. Line a plate with paper towels. Add the vegetable oil to large skillet set over medium heat. Once the oil is hot, scoop 1/4 cup mounds of the zucchini mixture into the pan, pressing them lightly to flatten; do not overcrowd the pan.
  7. Cook the zucchini fritters for 2 to 3 minutes per side or until golden brown.
  8. Transfer the zucchini fritters to the paper towel-lined plate and sprinkle lightly with salt. Repeat the process with any remaining zucchini mixture. Serve with sweet pepper sauce.
