Mixed Berry Kombucha Gummy Snacks

These easy Homemade Gummy Candies are made with fresh berries, kombucha and just a touch of agave syrup, making them the healthiest gummy snack around!

Ingredients

  • 1 1/2 cups chopped berries I used raspberries and strawberries
  • 1 cup kombucha use berry flavored kombucha for extra berry goodness
  • 4 tablespoons high-quality gelatin
  • 2 tablespoons honey or agave syrup

Instructions

  1. Puree berries in a high speed blender or food processor. Pass through a fine mesh sieve into a large bowl to remove any seeds. You should have about 1 cup of fruit puree.

  2. In a small pot over very low heat, warm the kombucha gently for about 1-2 minutes (do not boil). Gradually whisk in gelatin until dissolved (kombucha will fizz slightly).

  3. When gelatin has dissolved completely, quickly whisk in fruit puree and honey or agave.

  4. Pour mixture into molds and chill for 1-2 hours or until solid. Store in the refrigerator in an airtight container.

Recipe Notes

  • Gelatins are not created equal. You will need to look at the bloom strength when purchasing gelatin. The most common brand is Knox, which has a bloom strength of 225 and it would work fine here. "Platinum" gelatin goes up to 260 and "Gold" is generally around 200, "Silver" is 160, and "Bronze" can be as low as 125 - practically useless for homemade gummy candy. If you only find powdered gelatin with a bloom strength of under 200, you would need to increase the quantity of gelatine or you might end up with jelly, not kombucha gummies.
  • Make sure you don't boil the gelatine! 
  • Gelatin begins to set pretty quickly as it cools down, so it is best to keep to work relatively quickly when filling your molds.
