1cupred winesuch as Estancia Pinot Noir
1/4cupsugar
1small handful assorted fresh herbssuch as rosemary, thyme and marjoram
1 2-inchstrip lemon peel
Pinchof salt
2plumshalved, pitted and sliced into wedges
8slicesprosciuttohalved
Instructions
Bring red wine, sugar, herbs, lemon zest and salt to a simmer in a small saucepan over medium heat. Simmer until sugar dissolves, then add plums and continue to cook for about five minutes.
Remove from heat and let stand for ten minutes. Strain plums from poaching liquid and allow to cool completely.
Wrap each plum with a piece of prosciutto and serve.
