Salmon with Roasted Grapes and Thyme

A wonderfully simple and flavorful seafood dish to enjoy throughout the fall and winter months.

Ingredients

  • 1 large bunch red seedless grapes
  • 2 tablespoons olive oil divided
  • 4 sprigs thyme plus more for garnish
  • Salt and pepper to taste
  • 1 pound Wild Alaska Salmon

Instructions

  1. Preheat oven to 375 degrees. Place grapes on a baking tray and toss with 1 tablespoon olive oil. Season lightly with salt and pepper. Roast grapes for 15-20 minutes or until softened and beginning to caramelize. Remove from heat and set aside.
  2. Season salmon with Add remaining oil to a cast iron skillet over medium high heat. When oil is hot but not smoking, add salmon and cook for about 3-4 minutes on each side.
  3. Transfer salmon to plates and top with roasted grapes. Garnish with fresh thyme leaves.

Recipe Notes

Red or green grapes work here - I recommend seedless
