Honey Sesame Green Bean Stir Fry

This easy Green Bean Stir Fry is sure to be your new favorite weeknight meal, with snow peas, tofu and a honey-sesame glaze- yum!

Ingredients

for the stir fry sauce:

  • 1/2 cup vegetable broth
  • 3 tablespoons honey
  • 2 tablespoons rice vinegar
  • 1/4 cup low sodium soy sauce
  • 2 cloves garlic minced
  • 2 teaspoons toasted sesame oil
  • Pinch of red pepper flakes optional
  • 2 tablespoons cornstarch or arrowroot starch

for the stir fry:

  • 16 ounces firm tofu
  • 2 tablespoons high heat vegetable oil such as avocado or coconut (divided)
  • Salt and black pepper to taste
  • 2 cups 4Earth Farms green beans cut in half
  • 1/2 red onion sliced
  • 2 cups 4Earth Farms snow peas
  • 1 tablespoon sesame seeds
  • 1/4 cup chopped scallions

Instructions

  1. Combine the chicken broth, honey, sugar, rice vinegar, soy sauce, sesame oil and red pepper flakes (optional) in a small dish and whisk to combine. Set aside.
  2. Pat the tofu dry and cut into cubes. Heat one tablespoon of vegetable oil in a large nonstick skillet or wok over medium heat. Add tofu and cook until browned on all sides. Drain on paper towels and sprinkle lightly with salt.
  3. Add remaining tablespoon of oil to the skillet and increase the heat to high. Add the green beans and onion; cook until the green beans are blistered, about 5-7 minutes.
  4. Add snow peas and cook for another 2-3 minutes or until crisp tender.
  5. Add the tofu back to the skillet and reduce the heat to medium-low; give the sauce a quick whisk to reincorporate any ingredients that have settled to the bottom, then carefully add to the skillet. Add the sesame seeds. Stir to combine and cook until the sauce has thickened, about 2-3 minutes.

  6. Serve topped with scallions.
