Green Bean Stir Fry with Honey Sesame Sauce

I do love a stir fry. I’ve made so many renditions over the years with whatever I have in the fridge. Why do I love them much, you ask? Stir fry dishes are an ideal way to use what you have, they’re usually pretty quick to prepare, and you can riff on them in so many ways- changing up the veggies, protein and sauce- so they’re never boring. Plus any meal that packs in so many vegetables is always a good thing.

The stir fry du jour is a Honey Sesame Green Bean Stir Fry! I love that green beans take center stage in this dish. I added snow peas, red onions and tofu as well, and it all comes together beautifully thanks to a sweet and nutty honey sesame sauce- yum city!

How to make green bean stir fry

  1. First, mix the sauce ingredients together so that it’s ready to go when it comes time to add it: combine the chicken broth, honey, sugar, rice vinegar, soy sauce, sesame oil and red pepper flakes (optional if you like it a little spicy).
  2. Then cook the tofu: pat the tofu dry and cut into cubes. Heat one tablespoon of vegetable oil in a large nonstick skillet or wok over medium heat. Add the tofu and cook until it is browned on all sides. Drain them on paper towels and sprinkle lightly with salt.
  3. Next, add the veggies: add the a bit more oil to the skillet and increase the heat to high. Add the green beans and onion; cook until the green beans are blistered, about 5-7 minutes. Add the snow peas and cook for another 2-3 minutes or until they are crisp tender.
  4. Finally, add the tofu back to the skillet and reduce the heat to medium-low; give the sauce a quick whisk to reincorporate any ingredients that have settled to the bottom, then carefully add it to the skillet. Add the sesame seeds, too. Stir to combine and cook until the sauce has thickened, about 2-3 minutes. Serve topped with scallions.

Tips and tricks for stir fry success

  • Cooking the tofu separately from the vegetables ensures that they have enough room in the pan to get nice and crispy. Keep them in a bowl off to the side after cooking and add them back to the pan at the end to mix with the sauce.
  • High heat is your friend when it comes to stir frying vegetables. It will helps them to cook in no time and gives the vegetables a delicious blistered quality.
  • Give the stir fry sauce a quick stir or whisk just before adding it to the pan because the cornstarch will likely have settled to the bottom and this will help to re-incorporate it.
  • Make sure to turn the heat down to medium-low when adding the sauce- it doesn’t take long for the sauce to thicken into a shiny glaze.
  • If you can’t have cornstarch, arrowroot starch or tapioca starch are both suitable for thickening, although you may not need to use as much as the recipe calls for. Start with half and make another slurry with more starch mixed with a bit of water to add to the sauce if it hasn’t thickened enough after a couple of minutes.

Honey Sesame Green Bean Stir Fry

Ingredients

for the stir fry sauce:

  • 1/2 cup vegetable broth
  • 3 tablespoons honey
  • 2 tablespoons rice vinegar
  • 1/4 cup low sodium soy sauce
  • 2 cloves garlic minced
  • 2 teaspoons toasted sesame oil
  • Pinch of red pepper flakes optional
  • 2 tablespoons cornstarch or arrowroot starch

for the stir fry:

  • 16 ounces firm tofu
  • 2 tablespoons high heat vegetable oil such as avocado or coconut (divided)
  • Salt and black pepper to taste
  • 2 cups 4Earth Farms green beans cut in half
  • 1/2 red onion sliced
  • 2 cups 4Earth Farms snow peas
  • 1 tablespoon sesame seeds
  • 1/4 cup chopped scallions

Instructions

  1. Combine the chicken broth, honey, sugar, rice vinegar, soy sauce, sesame oil and red pepper flakes (optional) in a small dish and whisk to combine. Set aside.
  2. Pat the tofu dry and cut into cubes. Heat one tablespoon of vegetable oil in a large nonstick skillet or wok over medium heat. Add tofu and cook until browned on all sides. Drain on paper towels and sprinkle lightly with salt.
  3. Add remaining tablespoon of oil to the skillet and increase the heat to high. Add the green beans and onion; cook until the green beans are blistered, about 5-7 minutes.

  5. Add the tofu back to the skillet and reduce the heat to medium-low; give the sauce a quick whisk to reincorporate any ingredients that have settled to the bottom, then carefully add to the skillet. Add the sesame seeds. Stir to combine and cook until the sauce has thickened, about 2-3 minutes.

  6. Serve topped with scallions.
