Have you ever had one of those mornings where it’s literally going to take a mack truck to drag you out of bed because you have so much ahead of you to accomplish and it’s really daunting so you just stay under your covers and hit the snooze at least three times and force your cats to cuddle with you, but even they want you to get up because they’re hungry and we all very well know that it’s past their breakfast time?

This is mostly a problem for me on Mondays, because my mind races through all the grown up, responsible type things the upcoming week has in store, and on Mondays I pretty much can’t even. So it’s an extra bummer to get up on Mondays…I’m sure everyone feels me on that.

But lately this has been kind of an everyday thing. Maybe I’m going to bed too late. But I also suspect that life things are starting to pile up in a jumbled, Jenga-like fashion- business stuff, wedding stuff, blogging stuff, social stuff, relationship stuff, family stuff. Sometimes we just have too much stuff on our plates, and it’s all too tempting to hide away in our safe, cozy beds.

But we must face the music eventually, mustn’t we? And knowing that there’s a lovely little ready- made breakfast patiently waiting for me to pluck it out of the fridge gives me exactly the motivation I need to spring (or at least crawl) out of bed and take on the day- lovely little breakfasts like Chocolate Chai Overnight Oats. Because, chocolate, hello? But it’s also sweet and yummy and nourishing and flavored with warm, reassuring spices, making it the perfect thing to have for breakfast on those mornings that you simply can’t be bothered to adult, but have to anyway.

Chocolate Chai Overnight Oats

Chocolate Chai Overnight Oats are sweet, nourishing and full of warm spices, so they’re perfect for a cozy breakfast on the go!

Ingredients

  • 1 cup oats
  • 1 cup almond milk
  • 2 tablespoons cocoa powder
  • 2-3 chai tea bags or loose leaf tea tied into a cheesecloth sachet
  • 2 teaspoons agave
  • Pinch of salt
  • Chocolate chips optional
  • Toasted Coconut optional

Instructions

  1. Pour oats into a small bowl or container and set aside. In a small saucepan, bring almond milk to a low simmer. Whisk in cocoa powder until combined and remove from heat.
  2. Add chai tea, agave and salt and steep for 5-10 minutes (steep longer for a stronger chai flavor and less for more subtle spice notes).
  3. Remove tea bags and pour almond milk mixture over oats, stirring to combine. Cover and refrigerate overnight.
  4. Sprinkle with chocolate chips and toasted coconut before serving, if desired.

Recipe Notes

These keep on the fridge for up to 4 days.
