Remember earlier this week when I shared these Summer Vegetable Polenta Bowls? They’re a perfect quick and easy weeknight meal with lots of customizable options.
Well today I’m showing you how to elevate that base recipe for a more gourmet weekend meal, when presumably you’d have a little extra time to spend in the kitchen languishing over a meal. But even these little upgrades don’t take that much extra effort- you could definitely still make these Roasted Red Pepper Polenta Bowls on a weeknight if you’d like!
All that’s required to elevate the polenta into something extraordinary is a roasted red pepper- I char it over an open flame and puree the flesh, then stir it right into cooked polenta. I also add a splash of balsamic vinegar because I think a little acidity boosts the flavor of the roasted pepper.
Then top these Roasted Red Pepper Polenta Bowls with a few sea scallops, seared to golden brown perfection. Not only do they round out the meal with protein, but scallops just always feel fancy. Lastly, micro greens are my go-to finishing touch for when I want any meal to stand out a bit more.
