GUYS. I’m holding on to every last ounce of summer and I’m never letting go. I know it’s September and everyone is getting ready for apple/pumpkin/caramel everything. But we’re in the midst of a heatwave and my slammed catering schedule is finally about to wind down, so summer doesn’t even start until September as far as I’m concerned. Pass the frosè!
I’ll be over here stuffing my face with all the summer produce I can find, especially in the form of this ultra refreshing Watermelon Peach Salad. Featuring savory ricotta salata, fresh mint and shaved red onion, this is the perfect dish to cool off with on these sweltering Indian summer days.
Truthfully, I would have shared this recipe with you earlier in the summer if I could have. These photos were actually taken last summer as part of a photo shoot/dinner party collaboration I participated in with some other local girl bosses, and I finally got my hands on these particular images, just in time to share this Watermelon Peach Salad recipe while you can still enjoy late season stone fruit and melons. It was a gorgeous table styled by Jamie from Wild Heart Events, accented with pretty succulents from Dalla Vita. The sweet and savory combination from the juicy summer fruits alongside the salty cheese and the mild bite from the onion- everything just works. And mint is the ideal compliment to it all. The Watermelon Peach Salad especially paired beautifully with the local sparkling wine from Riverbench that was served.
This Watermelon Peach Salad also appears on my summer catering menu so I make it often for dinner parties- between the vibrant colors and the delicate balance of flavors, it’s always a sure bet. Best of all, it barely requires a dressing. Just a simple drizzle of olive oil and a squeeze of lemon juice is all that’s required to enhance the flavors.

Watermelon Peach Salad with Mint and Ricotta Salata
Squeeze every last ounce of goodness out of summer with this Watermelon Peach Salad, accented with fresh mint, savory ricotta salata and shaved red onions.
Ingredients
- 2 cups watermelon cut into cubes
- 1 cup peaches sliced
- 1/4 cup red onion thinly sliced
- 1/4 cup ricotta salata shaved
- 2 tablespoons fresh mint leaves
- 2 tablespoons olive oil
- Flaky sea salt
- Lemon juice
Instructions
Toss watermelon, peaches, red onion, ricotta salata and mint together in a salad bowl. Drizzle with olive oil. Garnish with flaky sea salt and finish with a squeeze of lemon juice.
