Can you believe that September is almost here? Personally I’m still feeling all the summer feels but I know that some of my friend’s kids have already gone back to school.

That’s why when Silk asked me to create a dairy free, back to school inspired recipe using their non-dairy yogurt alternative, I immediately knew I wanted to make something frozen. Something to help us cling tight to these last days of summer.

I had so much fun partnering with them earlier this year to create this Strawberry Vanilla Tart with Rhubarb Compote, so I’m thrilled to be working with them again.

These Vanilla Mango Popsicles, made with fresh mango, granola and Silk’s Peach-Mango and Vanilla non-dairy yogurt alternatives, are a no-brainer for back to school season. For that precious time when the weather is still warm and you can bring a bit of fun to the breakfast table.

Believe me, I know breakfast can quickly become boring and repetitive. So getting creative with something like these Vanilla Mango Breakfast Popsicles is sure to get anyone out of a breakfast rut!

 The addition of granola takes these popsicles over the top adding texture and heartiness! 

The crunchy layer of granola and fresh pieces of mango give these dairy-free popsicles a bit more interest and texture. There’s also some additional fresh mango blended in for some extra vitamins and nutrients.

They’re so creamy and crave worthy. I don’t have kids, and I’m not going back to school but I devoured two of them for breakfast and was completely satisfied all morning

How to unmold popsicles mess-free: 

There are several ways to unmold ice pops accident-free. However, I find the best method is to fill a pan with warm (not hot) water, and briefly dip the popsicle mold in until the pops loosen. They should separate from the mold after about 20 to 30 seconds.

Remove the mold from the warm water and place it on your kitchen counter Gripping the handles, pull gently upward. You should get nice, clean pops that way. If they are stuck, leave them in the water a little longer.

Tips for making the best popsicles at home: 

  • Choose ripe mangoes. The riper the fruit, the sweeter the popsicle, and as we add no sugar to these, you want to get as much natural sweetness from your fruit as possible.
  • When filling your molds, leave about one-quarter inch of room at the top as the popsicles will expand as they freeze. Wipe off any excess mixture from the top. If that residue freezes, it will make unmolding difficult.
  • Freezing times vary depending on the effectiveness of your freezer. For the best results, place your molds toward the back of the freezer where it’s coldest.
  • You can leave pops in their molds for several days without any problems. However, it’s best to unmold them within a day so they don’t discolor or change texture.

Vanilla Mango Breakfast Popsicles

These dairy free Vanilla Mango Breakfast Popsicles with crunchy granola are a fun and whimsical way to start your day.

Ingredients

  • 2 mangoes cut into small cubes
  • 3/4 cup Silk® Peach & Mango Dairy-Free Yogurt Alternative
  • 3/4 cup Silk® Vanilla Dairy-Free Yogurt Alternative
  • 1/2 cup granola

Instructions

  1. In a food processor, puree half of cubed mango with Silk® Peach & Mango Dairy-Free Yogurt Alternative.

  2. Add the Silk® Peach & Mango Dairy-Free Yogurt Alternative, Silk® Vanilla Dairy-Free Yogurt Alternative, remaining cubed mango and granola to each popsicle mold, alternating ingredients until the molds are full.

  3. Insert a popsicle stick into each mold and freeze for a minimum of 6 hours up to overnight.
  4. When ready to serve, run the molds under hot water for about 20 seconds to loosen.
